I've been wanting to bake bread for my family (I try to stay away from Gluten personally but Xander eats a lot of bread). All the preservatives in bought bread always had me worried, so I finally dove in head first and we bought a Grain Mill to mill our own wheat, and I attempted to bake bread. The first time I tried was a flop, but the second recipe worked incredible and tasted amazing! **Also sharing a quick Sweet Potato Casserole Dish for Thanksgiving Recipe Ideas!
100% Whole Wheat Prairie Gold Bread Recipe (Prairie Gold Wheat works best)
- 6 cups warm water
- 1/2 cup honey (recipe called for sugar, I used honey)
- 1/4 cup potato flakes
- 3 tbsp. wheat gluten
- 3 tbsp. sunflower lecithin
- 3 tbsp. instant yeast
- 1 1/2 tbsp. salt
- 3/4 cup melted lard (I used butter)
- 3 tbsp. dough enhancer (optional) *I didn't use this as it's not healthy*
Mix above ingredients well. Add enough flour to make a fairly thick batter. Beat until smooth.
Continue adding wheat flour, mixing well, till ready to knead. *Dough should be soft, almost sticky, rather than too stiff. A good indication is to add enough flour until it quicks sticking to side of bowl.
Knead 8 minutes. Let rise 15 minutes. Shape loaves and divide into 6 greased loaf pans. Let rise until almost double in size (approximately 20 to 25 minutes). Bake at 350 degrees Fahrenheit for 25 minutes, longer if large pans are used. Butter tops, remove from pans and cool preferably on a cooling rack and cover with a heavy towel.
Sweet Potato Casserole from Calhoun Bend Mill
2 Eggs 3 cups Sweet Potatoes, cooked and mashed 1 cup Sugar (I didn't use sugar, just a bit of honey) 1/2 cup Butter or Margarine, melted 1/3 cup Milk 1 tsp. Vanilla Extract TOPPING: 1 package Calhoun Bend Mill Apple Crisp Mix 1/2 stick Butter or Margarine, melted 1/2 cup Pecans, chopped (optional) 1/2 cup Raisins (optional)
Directions
Preheat oven 350°
In a medium bowl, beat eggs.
Add next five ingredients; mix well, spoon mixture evenly into ungreased 9 x 13 x 2 inch baking dish.
Prepare Calhoun Bend Mill Apple Crisp Mix according to package directions, sprinkle/spread over sweet potato mixture.
Bake 30 – 40 minutes.
Hi! I've been down the sourdough/home made bread path for the past year and caught this blog post. I have a grinder, but have been buying wheat berries in around 5lb bags, but would love to get the larger bag you show here. We try to avoid Amazon when we can and often will buy our smaller bags in Lancaster/natural food stores. Do you have any recommendations for a store that would sell the size bag you show? We have been to Miller's Natural Foods, but not sure if they have this particular brand. Thanks!
